4 Ingredient EAZZY Button Giardiniera Mashed Potatoes

MACRO FRIENDLY EAZZY BUTTON GIARDINIERA MASHED POTATOES

Makes 4 servings.

INGREDIENTS:

400 Grams raw Yukon Gold potatoes, peeled and cut into small chunks (about 4-5 medium sized)
3 TBSP low fat sour cream (if you have more fat macros use full fat and some butter, build your own adventure, macros will change however)
1 TBSP Parmesan Cheese, grated
1 TBSP Giardiniera (not Chicago style, get the small kind packed in oil)
2-3 TBSP skim milk or chicken broth
Salt and Pepper for seasoning

DIRECTIONS:

Peel and chop your potatoes (even pieces make the cooking process more smooth, please trust me). Put them in a cold pan of water and bring to a boil and simmer until fork tender.

Drain the potatoes. Return them to the hot pan and let them hang out to dry out for about 3 minutes.

Mash ‘em up with a fork. Add the sour cream, giardiniera and parmesan. Mash again. Add milk to smooth it out and make it less dry. Mash some more. Taste and season with salt and pepper to your taste. My taste is salty, yours may not be so salty. We can control salt. Very little else.

Tare a bowl and weight your mashers. Mine came out to 434 grams so I know 1 serving was about 108 grams. I wrote this on a post-it note and stuck it on my tupperware because I cannot remember anything anymore I am too damned old. Also guys I had to spell the annoying word “giardiniera” quite a bit so please know how much I am doing for you all.
